Using chicken stock boiled from the bones of our roast dinner, I made vegetable & chicken stew for dinner tonight. Met some friends for dinner last evening and I had to da-bao the huge chicken pie that I ordered. Took apart the pie and threw everything else into the stew – baby carrots, mushrooms, green peas, bits of roast chicken. Added potatoes, onions and carrots to the mix and dinner was served after about an hour (including chopping, slicing, peeling time). The recipe called for celery but I forgot to get them so no celery last night.
Thanks to a recipe given to me by the BGF, it made for a really yummy and heart-warming dinner. There’s just something really lovely having piping hot stew with fresh bread from Swissbake that the boy bought.
